Vegan Cajun Red Beans and Mushrooms

  • 1/2 cup brown mushrooms, chopped
  • 2 cups red kidney beans
  • 3 ears fresh corn
  • 1/2 red onion, diced
  • 1 red bell pepper, sliced vertically
  • 1 tbsp garlic, minced
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp cayenne
  • 1 tbsp dry oregano
  • 2 bay leaves
  • 2 tbsp barbeque sauce
  • dash everyday seasonings
  • garlic salt to taste
  • cilantro


  1. In a pan, saute garlic, onion, mushrooms, red bell pepper with olive oil

    Add 1 1/2 cups red beans. The remaining 1/2, blend in food processor (puree)

    Add red beans puree, add barbeque sauce. Add bay leaves

    Season with paprika, cayenne, dry oregano, everyday seasonings, garlic salt

    Simmer. Turn off heat once puree is quite absorbed by beans and mushrooms

    Top with cilantro. Serve with rice or quinoa
