We love a good salad any time, don’t we? Even more if it’s easy and does not require a gamut of ingredients! Well today you’re in for a treat because I am sharing not one but two recipes you can enjoy pronto.
Let’s start with mango salsa. You can eat it as is, mix with spring greens or as toppings to your vegan burrito (or taco!). Yes, its versatility cannot be undermined. Even the hubs who’s a picky vegan swear by its flavor. In his words ” it gives my food that extra kick, so flavorful”.

This mango salsa recipe lists the following ingredients: chopped tomatoes, chopped onions, chopped mango, chopped cilantro (or italian parsley), dash himalayan pink salt, lemon squeeze. Mix altogether, serve cold. Easy peasy right?
The next salad is another no-brainer, I call it corn celery salad because those are the key ingredients.

You will need sweet corn, chopped celery, chopped onion, chopped italian parsley, one tablespoon vegan ranch, lime squeeze. Mix everything, serve cold.

Thanks for sharing. I’ll be sure to show this to my DH since he loves mango salsa. I like making a corn salad even more in the summer when I can use fresh corn but it’s a nice change of pace for now too.
