Here’s another vegan and gluten-free recipe for you! It is actually an offshoot of my granola oat cookies I posted not too long ago. True to my goal of making vegan food accessible, easy and tasty for you my lovely readers and friends, these vegan and gluten-free bite-size peanut butter cookies only require four ingredients and they are ready to serve in under 15 minutes. I kid you not.

Frequent readers of my blog know that my mom regularly sends me vegan food as part of her care package (she lives in California). So she sent me this cinnamon apple oats which I don’t like eating on its own (sorry ‘meh, it’s the oatmeal, not you, haha!) But waste not, want not is my mantra so I used it for this particular recipe. With that said, take note that this add-on ingredient is optional. You can use regular oat or omit if you don’t have it. That’s the beauty of tweaking a recipe, make use of what you have. But if you want a little “holiday” kick to your traditional peanut butter cookies, use it the same way I did. One of the key ingredients here is granola (I love this brand from Michele’s). My husband who is also vegan gave me the idea to make these cookies bite-size for his snacks especially when he’s on the road. So there, mom and hubs had valuable inputs for today’s recipe post!

Bite size Peanut Butter Cookies

These bite-size vegan and gluten-free peanut butter cookies only require four ingredients and ready to serve in under 15 minutes.

Ingredients
  • 1 cup granola
  • 3 tbsp agave or maple syrup
  • 3 tbsp peanut butter
  • 3 packets apple cinnamon oats (optional), can be replaced with 1/2 cup oats
Instructions
  1. Pre-heat oven to 350 degrees.

    In a blender, pulse granola and oats together. Transfer to bowl.

    Add agave or maple syrup and peanut butter.

    Scoop and form small ball in between palm. Flatten as you would in a cookie.

    Bake for 10-12 minutes.

    Serve right away or allow to cool then serve.

These are gluten-free, not nut-free so don’t make or attempt to serve or offer to anyone with known peanut allergy. I thought I’d mention this just so we are on the same boat.
