Who loves acai bowl? I can eat it for breakfast, post-workout, lunch or as dessert! It’s a healthy treat, bursting with flavor, vitamins and minerals. Talk about nutrient-dense food that’s simple, quick-fix, and only the good stuff, just like this acai rainbow bowl.

Nutrient-dense means food that is high in nutrients and low in calories. These are fruits and vegetables which are unprocessed or minimally processed. So if you’re trying to lose weight, concentrate on WFPB (whole food plant-based).
Acai is a berry native to South America. It’s a “super fruit” to modern-day fitness enthusiasts. Rich in anti-oxidants, vitamins and minerals, it has become a staple in smoothies or bowls. Over here in Hawai’i, it’s pretty common to see acai bowls offered in local restaurants. In fact, even a big franchise like Jamba Juice has acai bowl. While it’s no doubt that acai is healthy, it’s what you put in it that makes it not so healthy. For example, Jamba Juice has reportedly over 60 grams of sugar (about 15 teaspoons). For this recipe, I used frozen acai packs I bought from Target and mixed with banana, mango, strawberry, my favorite granola and chia seeds. Chia seeds are rich in omega 3 fatty acids (good for the heart). No added sugar, no plant-based milk, no peanut or almond butter. It tastes just as good!
I am a happy camper because my friend gave me about a dozen mangoes from her very own tree! They’re big which makes me and my furry baby ecstatic! I told her she saved me money because I buy organic mangoes at $4-$5 each! Thank God for friends who have mango trees, right?

- 2 frozen pack acai
- 1/2 cup granola
- 3-4 strawberries, sliced
- 1/2 banana, sliced
- 1/2 mango, sliced
- chia seeds

Blend frozen acai (add some water).
Arrange ingredients in a bowl. One side granola, other side acai puree.
Top with banana, mango, strawberry and chia seeds.
