Another curry, another quinoa. Can you tell I love both?! Every time I need to bring something for a gathering, curry quinoa salad is top of mind. It’s easy to prepare and the exotic taste impress even those who are unfamiliar with this protein-rich beautiful grain! I’ve been asked many times how I make it, in particular, how to achieve the fluffiness and remove its bitter taste. Look no further, mama got you covered!

Keep this ratio in mind: for every one cup of quinoa, cook with two cups water. Keep this in mind to remove the bitter taste: once it starts boiling, immediately add your choice of seasoning (yes, you can flavor quinoa hundred different ways). For this recipe, scoop out one teaspoon curry powder, one teaspoon spike (blend of herbs and spices, MSG-free). Reduce heat and simmer for 15-20 minutes until the water is all soaked in. Fluff with fork every now and then. Now you got the basics. Let’s add some raw veggies, anything you have in your fridge, really!

For this bowl, I diced some red bell pepper, cucumber and avocado. Sometimes I would add green peas or cherry tomatoes. I actually made a batch and brought it to an event the following day, served cold like you would in a salad. Tasty and refreshing, a great summer recipe you can try now! - 1 cup quinoa
- 2 cups water
- 1 tsp curry powder
- 1 tsp spike
- 1 red bell pepper, diced
- 1 avocado, diced
- 3 mini cucumbers, diced

In a pot, cook quinoa with water.
Once it starts boiling, add curry powder and spike.
Reduce heat. Simmer. Cook for 15-20 minutes. Fluff with fork every now and then.
Add raw vegetables.
Serve hot or cold. I personally prefer cold
I can’t believe I blogged almost everyday this week despite my ultra-busy schedule at work!
