I have been extremely busy at work and some personal matters, hence the lack of blog posts lately. For that I deeply apologize! Anyway, I have a quick recipe post for you guys before I forget all the ingredients that I put together for this delicious and refreshing salad, whether for spring or summertime!

Now that mangoes are in season, I am more than delighted to incorporate this amazing fruit which is high in fiber, packed with vitamins A, C & E, calcium, folate, among others. Mangoes remind me of my fun childhood. We used to have this big Indian mango tree that bear fruits during summertime. My neighbors and playmates will congregate under our big shady tree so I saw this as an opportunity to sell sliced green mango (with choice of soy sauce or salt) or yellow mango (ripe) iced candy (basically frozen mango juice in tiny plastic bag). Mind you I was barely 10 years old when I convinced my grandparents of my “business”. On top of that, I also rented out my comics and game and watch gadgets to my playmates. Entrepreneurial I guess. Nothing is free, right? Funny how mundane stuff like this mango can trigger a distant past! So going back to this recipe, you need a “just about ripe” mango. Meaning, it’s quite firm to touch (never mushy) but decently ripe enough to enjoy its sweetness. If it smells fruity by the stem, it’s an indication of magnificence.

The other ingredients include spinach, red beans, taco seasoning powder and cherry tomatoes. Note that you can add or replace with vegetables you prefer or have at the moment. For a more filling salad version, I would suggest adding either quinoa or couscous. Eat the rainbow for optimal health!

This quick and refreshing salad features the king of fruit, mangoes for the win!
- 1 mango, sliced
- 6-7 cherry tomatoes, quartered
- 1 cup cooked red beans
- 1.5 tsp taco seasoning

Add taco seasoning to cooked red beans
Toss other ingredients
Serve cold
