I love a good hot soup anytime! My mom sent me a bag full of split pea so immediately, I tear it open and whip up this recipe from scratch. I love experimenting with different flavors and spices! My stash is growing exponentially as friends and relatives know that the easy way to my heart is a bottle of….. you guess it right, spices or herbs!

This split pea soup is bursting with flavor with curry, cumin, vegetable bouillon, green peas, carrots, corn, and coconut milk as main ingredients. Eat as is or pour over wild rice, second serving is underway!

- 8 cups water
- 2 cups split pea
- 1 can coconut milk
- 2 tbsp onion powder
- 1 tbsp curry powder
- 1 tsp cumin powder
- 1 tbsp vegetable bouillon
- 1 cup green beans
- 1 whole diced carrot
- 1/2 cup corn
- Himalayan pink salt to taste

Soak split pea soup for about one hour. Rinse and drain.
Boil split peas.
Add coconut milk, curry, cumin and garlic powder and vegetable bouillon. Simmer.
Add green beans, carrot and corn when split peas are cooked and the soup is quite creamy. Cook for another 10 minutes.
Serve hot. Eat as is or with rice (we love wild rice!)
Split peas are high in protein, great source of complex carbohydrates and fiber, plus add vegetables as mentioned (or whatever is available within your reach), you have a hot bowl of nutrition right there.
