I don’t deny that I do intermittent fasting (16/8) on weekdays but that’s because I was never a big breakfast eater as I am usually full from prior dinner (read the science of intermittent fasting) but on weekends when I’m chill and have no reason to rush, I take my time to enjoy a decent breakfast just like this vegan power bowl! Bonus point: easy to prepare, no cooking involved.

Looking at this vegan power breakfast bowl while I type makes me drool. I mean, it’s oozing with antioxidants, dietary fiber, vitamins, minerals, omega-3 fatty acid and protein. And with food this colorful and appetizing, a second serving is possible!
I’m almost certain you have the key ingredients but if not, grab these in your next grocery trip: granola, almond milk, almond butter, chia seeds, strawberries, blueberries, banana. No time in the morning to prepare? Do it at night time and it will taste just as good! (read vegan pantry essentials). Love a good pre or post-workout snack? this one can pass for it. Healthy and versatile, it’s a bowl made for champions.
In my previous video (March favorites), I mentioned two food items that are staples to me, Michele’s granola and Almondipity almond butter which I normally order via Amazon. I ran out of the latter so I had to buy something from Target which isn’t bad either. Creamy and nice for a bowl like this. Got a food processor? why not make your own almond butter!

Rich in vitamins, minerals, antioxidants, dietary fiber, omega 3 fatty acid and protein, this breakfast power bowl is the best thing you will eat this morning!
- 1/3 cup granola
- 1 tbsp almond butter
- 1/3 cup almond milk (or any plant-based milk)
- 1 tbsp chia seeds
- 3 big strawberries, sliced
- 1 small banana, sliced
- handful blueberries

Put all ingredients in a bowl. Adjust measurements accordingly.
Mix and enjoy your breakfast.

So let’s talk about this coconut bowl. I didn’t buy the set just to give my food photos a more aesthetically pleasing vibe. I strive to be zero waste in our household as much possible. Coconut shells are 100% natural, biodegrable, and a byproduct of recycling (read 3 things you can do to celebrate earth month). The bowl is gorgeous! For some reason, I love almonds, but I’m just okay with almond butter. I’d prefer peanut butter and would use less.

That breakfast bowl looks super yummy! I’d consider that a dessert bowl for myself, haha! Do those bowls wash well? Can you only eat certain things in them — like, can things soak in and ruin them?
Yep, can pass for dessert too. Hand wash only. You can eat anything with it. The only maintenance is when it loses its shine, lightly coat with coconut oil

I prefer a savoury breakfast, but there are such few wheat-free options (plant-based savoury brekkers recipes welcome, especially wheat-free ones, since I’m allergic). This is a great idea if I’m in the mood for something sweet. I’m going to look into coconut utensils, though pretty much everything I have is stainless steel.
