It’s a bowl of protein.
So where do you get your proteins? All plants have proteins. Eat in variety. There is no protein deficiency in plant-based vegan food. Today’s recipe is pack-full of proteins in varying amounts, with red beans being the main star. Toss in mushrooms, corn, bell pepper, eat with quinoa or brown rice, your energy boosting meal is served.
But really, how many of you count your protein requirements in a day? Unless you’re body-building, my guess is 99.9% don’t (read vegan bodybuilding tips) . And is it really protein we should be concerned with or rather essential amino acids? I will reserve that topic in a separate post but for now, let’s focus on this oh-so-tasty cajun recipe!

Cajun is one dish that’s easy to veganize because you can add and replace plant ingredients as you wish but it will taste the same. The secret lies in the spices! My collection of herbs and spices is multiplying like crazy because my mom just sent me a fresh batch recently. I am in the midst of updating my kitchen pantry so once that’s completed, I will be sharing some tips especially if you have limited space to work around with (read vegan pantry essentials).

Served with rice or quinoa, this protein-packed cajun recipe is great any time of the year, especially if you’re missing some comfort food. Easy to prepare, say what?
- 1/2 cup brown mushrooms, chopped
- 2 cups red kidney beans
- 3 ears fresh corn
- 1/2 red onion, diced
- 1 red bell pepper, sliced vertically
- 1 tbsp garlic, minced
- 1 tbsp olive oil
- 1 tsp paprika
- 1 tsp cayenne
- 1 tbsp dry oregano
- 2 bay leaves
- 2 tbsp barbeque sauce
- dash everyday seasonings
- garlic salt to taste
- cilantro

In a pan, saute garlic, onion, mushrooms, red bell pepper with olive oil
Add 1 1/2 cups red beans. The remaining 1/2, blend in food processor (puree)
Add red beans puree, add barbeque sauce. Add bay leaves
Season with paprika, cayenne, dry oregano, everyday seasonings, garlic salt
Simmer. Turn off heat once puree is quite absorbed by beans and mushrooms
Top with cilantro. Serve with rice or quinoa
