6 Layer Vegan Burrito Recipe

El favorito burrito.

Do you know that Taco Bell has a vegan option for their 7-layer burrito? called fresco, they will give you 5 layers by taking out sour cream and cheese. Of course, it does taste exactly like fast food so if you’re looking for fresh and homemade recipe, look no further because I will share my very own 6- layer version, with vegan sour cream, of course! Bonus point? it ain’t that difficult to make!

6 Layer Vegan Burrito Recipe

Burrito is easy to veganize, come to think of it. I’ve made several versions of it already: black beans, black beans + tofu, standalone tofu, mushrooms, beans + quinoa, the list is endless. But for this particular recipe, the following will be our main stars:

Layer 1: Romaine lettuce: shredded as you wish.

Layer 2: Black beans: you can also use red beans or white beans. Really, anything your heart desires.

Layer 3: Soy curls: these are great meat alternatives, very chewy at that. I used the one from Butler’s, they come dehydrated in packs of 3 (if you buy from Amazon), just soak in water for 10 minutes, drain then cook.

Layer 4: Salsa: easy to make, even with your eyes closed. 4 ingredients: diced onion, diced tomato, cilantro, squeeze of lemon.

Layer 5: Avocado. Mash it like a rockstar.

Layer 6: Vegan sour cream. Again, only 4 ingredients: raw cashews, plant-based milk, apple cider vinegar, lemon squeeze.

There are several tortillas you can serve this with. My favorites are either spinach or sprouted grain. For this particular recipe, I used Ezekiel brand.

One of the things I advice people who are new to vegan lifestyle or currently transitioning is to invest in a good blender or food processor. I’ve had my Ninja blender since 2013 and still going strong to this day. Read: vegan pantry essentials

Ingredients
Burrito
  • 1 cup soy curls, soaked and drained
  • 1 cup black beans
  • 2 tbsp taco seasoning
  • 1/4 tsp dried oregano
  • 1/2 tsp maple smoke powder
  • 1/4 tsp paprika
  • dash garlic salt
  • romaine lettuce
  • tortilla
  • 2 tbsp olive oil
Vegan sour cream
  • 1 cup raw cashews
  • 3/4 cup almond milk (or any plant-based milk of your choice)
  • 2 tbsp apple cider vinegar
  • 1/2 lemon, squeeze
Salsa
  • 1 medium size tomato, diced
  • 1/2 purple onion, diced
  • fresh cilantro
  • 1/4 lemon, squeeze
  • dash garlic salt and pepper
Avocado spread
  • 1 whole avocado, mashed
  • fresh cilantro
  • 1/4 lemon, squeeze
Instructions
  1. Soak soy curls for 10 mins. Set aside. Drain when ready to cook.

    Salsa:

    Dice tomatoes and onions. Sprinkle with fresh cilantro, dash garlic salt. Squeeze lemon juice. Transfer to bowl. Put in fridge. 

    Avocado spread:

    Slice 1 whole avocado, remove seed. Mash and sprinkle with fresh cilantro. Transfer to bowl. Put in fridge.

    Vegan Sour Cream:

    In a blender, combine all ingredients. The desired consistency should resemble like real cream. Transfer to bowl. Put in fridge.

    Burrito:

    Saute soy curls in olive oil. Add black beans. Stir in medium heat for 5 minutes.

    Add the rest of the seasonings. Stir until cooked. 

    Layer tortilla as follows: lettuce, soy curls/beans, avocado, salsa. Top with vegan sour cream. Fold tortilla.

    Enjoy!

    Yum! I always feel like I would like the version from Taco Bell but the fast food nature really shows. I’ve never made this at home, although we’ve done many burrito variations.

    Yaaa Taco Bell is the only fast food I can eat haha. I love the Fresca option but I love your recipe too!
